This cucumber lemonade will be a welcome addition to your summer lemonade collection. It's full of health benefits thanks to the cucumber juice and the flavour of fresh mint, and it's simple to make!

    2 cups (200 g) quick oats 1 cup crispy rice cereal, like Rice Krispies
    1 cup (255 g) creamy peanut butter 1 cup (96 g) ground flaxseed
    1 cup (170 g) mini chocolate chips ⅔ cup (227 g) honey or agave nectar
    2 teaspoons pure vanilla extract 2 tablespoons coconut oil

    Instructions

    • In a large mixing bowl, combine all of the ingredients, stirring slowly to avoid crushing the crunchy rice cereal. Mix until everything is well blended.
    • Drop rounded tablespoonful-sized chunks onto a parchment or wax paper-coated baking sheet with a cookie scoop (or roll small quantities in your palms). I scooped the dough with a cookie scoop and then rolled it between my palms.
    • Refrigerate for 1-2 hours before serving. You may now serve them or freeze or refrigerate the chilled granola bites in a large airtight container or ziplock bags. They will keep for up to a week in the refrigerator or a few months in the freezer.
