This chickpea salad sandwich is the healthiest vegan breakfast/lunch for your little tot. It is yummy as well as packed with protein, calcium, iron and fibre to give your little ones some nutrients in their diet.

2 Cup boiled chickpeas
½ Cup grated carrot
¼ Cup onion, finely chopped
1 ½ tbsp pickle juice
¾ Cup hummus
Other seasoning spices to taste
Lettuce, tomato (optional)
Instructions
- Mash the boiled chickpeas.
- Finely chop the onion, grated carrot and stir into the chickpeas.
- Stir in pickle juice (1 1/2 tbsp) and hummus (2/3 - 3/4 C). You can add extra hummus to reach desired texture.
- Add salt, paprika, onion powder and garlic powder are other tasty options.
- Spread the mixture on the sandwich bread.
- Add lettuce or tomatoes (optional)
